The Sparkling Sake Brewery is a small-batch brewery based in Cambridgeshire, dedicated exclusively to naturally sparkling, bottle-fermented sake. Founded by Kyoto-born brewer Naoki Toyota, the brewery explores Japanese fermentation through sparkling sake and small-batch seasonings crafted from koji and fresh sake kasu. Inspired by the beauty of nature's impermanence, its creations are loved by Michelin-starred chefs across the UK.
