The book is intended 'As much for the mind as for use in the kitchen'.  Toklas sets out an array of dishes from the simple to the elaborate, such as a green herb mashed potato 'whirred to astonishing cloudlike softness', together with the authentic artichokes of Catherine de Medici, plus an entire chapter on cooking with champagne.
